Date and cashew nuts bombon

Ingredients


• 100 g of dates (without seed)

• 60 g of cashew nuts or any other nut of your choice

• 1 level teaspoon of cocoa powder

• 1/2 teaspoon of powdered cinnamon


When shaping: cocoa powder, crushed pistachios, crushed cashew nuts or dry grated coconut


Method

Leave the dates to moisturise by covering them with a little water for 30 minutes.

Meanwhile, take the cashew nuts to toast in the preheated oven until lightly browned. Remove from oven and wait until warm. Once the cashew nuts are warm, take them to the processor to grind (they should be in small pieces). Put to one side.

Take the dates already hydrated to the food processor and process them until it forms a paste. Add cocoa powder and cinnamon. Mix again. Now add the cashew nuts and mix well.

Refrigerate for 20 minutes and then shape the sweets, coating them with cocoa powder, grated coconut, pistachio or cashew nuts. Store in a glass jar and keep cool! Makes approximately 10 sweets.
