Ingredients
(Measuring cup: 200 ml)
• 4 peeled apples (reserve the peels)
• Juice from 1/2 lemon
• 3 whole eggs
• 1/2 cup of oil (can be coconut oil)
• 1 cup of coconut or brown sugar
• 1 tablespoon of cinnamon powder
• 1 cup raisins
• 1 cup of chopped walnuts or other nuts
• 1 cup fine rolled oats or oatmeal>
• 1 cup of gluten-free flour mix
Method
Peel the apples (reserving the peels), cut them into cubes, and drizzle with the lemon juice on top.Beat in a blender: eggs, sugar, oil and apple peels.Pour into a bowl and add the oats, cinnamon powder, flour mix, diced apples, raisins, and walnuts.Finish by adding the baking powder.Mix well. Preheat the oven for 10 minutes at 180 degrees.Grease a tin with oil and sprinkle with rice or oat flour.Pour the batter and bake for approximately 30 minutes
Wait until cool to unmould.
