HEALTHY HOMEMADE NUGGETS

Ingredients:

• 500 g of ground or crushed chicken breast

• 1 teaspoon of dehydrated oregano

• 1/2 teaspoon of turmeric

• 1 pinch of cumin

• 1 pinch of smoked paprika

• 1 pinch of black pepper

• 1 flat teaspoon of salt

• Half lemon juice

• 1 small onion

• 1/2 large or 1 small carrot

• 1 piece of broccoli stalk

• 1/4 red pepper

• 1 piece of celery stalk

• 1/2 leek

• Fresh parsley and chives to taste

• 1 tablespoon of extra virgin olive oil

• 4 tablespoons full of finely flaked oats

• 1 small egg

• Cornmeal or linseed flour for breading


Method :

Season the chicken with spices, salt and lemon juice. Set aside.

Grind all vegetables in the food processor and place in a skillet to sauté in oil. As soon as they sauté well, turn off the heat and wait for it to cool. Take the seasoned chicken to the mixer with the parsley and chives and let it mix until it forms a homogeneous mass. Add the sautéed vegetables and mix well. Pour into a bowl and add the egg along with the oats. Now, shape the nuggets with the help of a spoon and roll them in the cornmeal or linseed flour.

Preheat the oven to 180°C and bake the nuggets on a non-stick baking sheet greased with oil for approximately 20 minutes (10 minutes on each side). If you prefer, you can grill it in the pan, smearing it with olive oil.

Serve it warm with your favourite meal.

PS: It can be frozen raw and already shaped.
