- 1 egg

- 2 tablespoons of hydrated tapioca starch

- 1 tablespoon of water

- ¼ teaspoon of baking powder or baking soda

- salt to taste.

Note: You can use pepper, paprika, saffron or any other seasoning you like to add more flavour to the dough.


Mix all the ingredients in a bowl and beat as if you were making an omelette. Grease the pan with oil and heat it. Pour the batter and keep the heat low. When the edges start to loosen, turn the dough to bake the other side.

You can add various vegetables, such as grated carrots or zucchini, spinach, kale, tomatoes, onions, leeks to enrich your crepioca.

And you can also make the sweet version of crepeoca, adding a pinch of cinnamon, 1 teaspoon of coconut sugar, grated apple or pear, and chopped banana or berries.
