Ingredients:
- Vegetables: Sweet Potato, aubergine, courgette, onion, chestnut mushroom, yellow and red bell peppers cut in medium pieces.
- Seasoning: Salt, black pepper, herbs de Provence, oregano and olive oil.
Method:
Mixed all the vegetables in a bowl with the seasoning ingredients. Bake them for 20-25 min at 170℃ and enjoy!
Suggestion: Have the vegetables with a source of protein (fish, chicken, turkey, tofu, tempeh).
