AUBERGINE AND TOMATO SAUCE

Ingredients:

- 8-10 tomatoes (without seeds, cut in halves)

- 1 medium aubergine, cut in cubes and soaked in water for 20 min.

- 1/2 onion

- 1 or 2 cloves of garlic

- 6 to 8 black olives

- parsley, basil, oregano, salt and black pepper


Method:Pour boiling water into the cut aubergine to make it soft.

In a food processor, mix all the ingredients. Cook them with a tablespoon of olive oil for 10 min.

Enjoy it with wholemeal or gluten-free pasta!
